About Goat Meat
There are several different breeds of goat, some bred for their meat, others bred for dairy. (milk/cheese) We raise Boer cross goats. The boer breed is an excellent meat breed, producing a much higher muscle content than a dairy breed.
Goat meat is the most widely consumed meat in the world, and has been the meat choice by many cultures for centuries.
While traditional holiday meals of goat are the norm for the world, everyday consumption is just now catching on here.
What makes goat meat special is it is extremely healthy nutritional value. The demand for lean meat is increasing domestically as society is making healthy lifestyle choices.
Goat meat is classified as red meat, but is leaner and has less saturated fat, calories and cholesterol than other red meats such as beef and lamb.
We use the term "CHEVON" for young, yearling goats aged about 7 months to approximately 12 months with live weights from 60 to 120 pounds. These animals, derived from the Boar goat breed or from a cross with a Boar goat, yield a better meat-cut size and a quality of meat more familiar to North Americian taste buds. Weanling Boar's of less than 60 pounds are from about 3 months to about 6 months of age and are harvest as whole or half carcasses and termed "CABRITO", the Spanish word for young goat. Both Cabrito and Chevon make for great dining.
